Wayland Board of Health defers China Rose sushi variance to August

WAYLAND — July 14, 2025 — Wayland Board of Health delays China Rose sushi variance over inspection history. The board voted 3-0 Monday to continue the restaurant's request to acidify rice and begin serving sushi until its Aug. 11 meeting, citing critical violations dating to December 2023, including a May 2024 emergency closure when a walk-in cooler ran 15 degrees over the legal limit and a May 2025 repeat finding with a glass refrigerator. Food inspector Beth Grossman said the consultant-drafted HACCP plan "would need like three or four changes" and originally named the wrong sushi chef. Attorney Ken Barrett said proposed chef Mr. Zhou has 10 years of experience and a current ServSafe certificate. In a separate 3-0 vote, the board gave owners of 76 Main St. and 6-8 Damon St. six months to design a shared septic system replacing two failed cesspools.
